Admittedly I added a little ham to the mix as well….. just rounded off this lunch time nibble Which was delicious… and fairly filling as well. We had 4 pancakes each (16) … not including the one we ‘tested’.
- 4oz flour
- 1 tsp baking powder
- 2 eggs
- 1/2 pint milk
- 4oz grated cheese
- salt to taste
- fat for frying
- Blend the flour, baking powder and mixed eggs smoothly, add sufficient milk to make a thick, smooth batter.
- Beat for 10 minutes then add the rest of the milk, the grated cheese and salt.
- Heat a little fat in the frying pan till smoking hot, pour in a thin layer of batter, fry until golden brown on both sides. <<<< I’m useless at large pancakes so i drop three heaped tablespoons of the mix into the pan….. I make many small ones forthe kids as opposed to a few big ones….. its easier and less messy when toppings are added.
- Turn out and top with sauce, sprinkled cheese or just eat as they are… continue until all the batter is used.
